Easy recipes to please everyone this Pancake Day

Ah, Pancake Day – hands down the best day of the year so far. To celebrate, we’ve pulled together a handy little guide for making fluffy, mouth-wateringly good pancakes every time. With a recipe and topping ideas as easy as this, going for the store-bought mix would be an actual crime.

Light and fluffy buttermilk pancakes



Ingredients:

  • 350g plain flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ¼ tsp salt
  • 425ml buttermilk 
  • 1 large or 2 small eggs
  • 4 tbsp butter
  • 1 tbsp vanilla extract


Method

1. In a large bowl, mix together all the dry ingredients – the flour, sugar, baking powder, bicarbonate of soda and salt.

2. Whisk the buttermilk, egg, half of the butter and the vanilla in a separate bowl. Pour over the dry ingredients and gently whisk until well combined. 

3. Heat a large non-stick frying pan over a medium heat and lightly grease with a little butter.

4. Pour the batter into the pan, around ¼ cup at a time. Spread slightly to form pancakes.

5. Cook the pancakes for about 1 - 2 minutes until bubbles arise. Flip over and cook for another minute or until the bottoms are golden brown.

6. Transfer to a baking sheet and cover to keep warm or simply place in a warm oven until you've made the rest of the batch.

We don’t want to start a national debate about what topping is best so we’re just going to present you with a few ideas that’ll help you up your pancake game in no time. 


For the traditionalists

You can't go wrong with maple syrup and bacon – the best combination ever known to man. Working perfectly with the fluffy buttermilk variety, make sure your bacon is nice and crispy, and lay the rashes on kitchen towel first to get rid of any excess oil. 

Bored of maple syrup? Top your pancakes with a generous amount of honey butter instead. Simply whisk together melted butter and honey for a ridiculously delicious option. We're big fans of that subtle mix of sweet and savoury.


For the avant-gardes 

Shrove Tuesday is the perfect opportunity to spread your culinary wings. Adorn your pancakes with mascarpone, sprinkle over a bunch of raspberries and add some crunch with chia seeds, chopped pistachios or pecans.

Alternatively, go for something a little out-of-the-ordinary and mix condensed milk with a tablespoon of matcha powder to make a sauce with a refreshing kick of green tea. It has the benefit of looking very healthy, which is always a bonus.



For the lovers of all things sweet

For those who’ve got a seriously sweet tooth (we don’t judge), Nutella and peanut butter are hard to beat. Want to switch things up? Opt for almond butter. It’s still ridiculously yummy but just a tad healthier, and there's extra points if you add blueberries. 

Otherwise, smother your pancakes in caramel-y banana goodness. Melt butter and brown sugar in a pan, add sliced bananas and cook for a few minutes until golden. Pile the caramelised bananas on top of your pancakes and finish with a dollop of Greek yogurt for a little pizzazz. We're drooling just thinking about them...
