We All Scream for Ice Cream!
We’ve got a lot to thank the humble ice cream for. Here are just a few of them:

Rhubarb and custard ice cream:
Ingredients:
- 4 egg yolks
- 100g caster sugar
- 300ml milk
- 300ml double cream
- 300g rhubarb
Preparation:
- Wash the rhubarb and process in a food processor or blender to desired consistency and set aside.
- Pour the milk into a saucepan and slowly heat until simmering. Then remove from the heat.
- In a bowl, beat the egg yolks and sugar together and still beating, pour in the milk.
- Return to the heat and stir constantly until the mixture forms a film over the back of a wooden spoon – do not let it boil.
- Remove from the heat and allow to cool. Once cool, stir in the cream and rhubarb puree.
- Switch on the ice cream maker and pour in your ingredients. Allow to churn until desired consistency is reached.
- Serve and enjoy.
Strawberry yoghurt ice cream:
Ingredients:
- 250g strawberries
- 300ml plain yoghurt
- 100g caster sugar
Preparation:
- Blend together the strawberries and sugar using a food processor or potato masher.
- Stir the yoghurt in with the blended strawberries.
- Switch on ice cream maker and pour in ingredients
- Serve garnished with fresh strawberries.
