We All Scream for Ice Cream!

We’ve got a lot to thank the humble ice cream for. Here are just a few of them:

  • It’s numbed millions of broken hearts (think Bridget Jones)
  • It reminds us of summer, beaches, BBQs and all round good times
  • It makes fruit salads naughty…
  • Kids parties aren’t kids parties without jelly and ice cream
  • It cures sore throats and hangovers
  • It indulges our love of all things retro: old-school vans, black and white seaside images, bunting and village fetes
  • You can match it with your sun hat
  • It makes many a bad film worth the watch

And finally…it can be made at home any time day or night, in only 20 minutes!

Rhubarb and custard ice cream:

Ingredients:

-         4 egg yolks

-         100g caster sugar

-         300ml milk

-         300ml double cream

-         300g rhubarb

Preparation:

  1. Wash the rhubarb and process in a food processor or blender to desired consistency and set aside.
  2. Pour the milk into a saucepan and slowly heat until simmering. Then remove from the heat.
  3. In a bowl, beat the egg yolks and sugar together and still beating, pour in the milk.
  4. Return to the heat and stir constantly until the mixture forms a film over the back of a wooden spoon – do not let it boil.
  5. Remove from the heat and allow to cool. Once cool, stir in the cream and rhubarb puree.
  6. Switch on the ice cream maker and pour in your ingredients. Allow to churn until desired consistency is reached.
  7. Serve and enjoy.

Strawberry yoghurt ice cream:

Ingredients:

-         250g strawberries

-         300ml plain yoghurt

-         100g caster sugar

Preparation:

  1. Blend together the strawberries and sugar using a food processor or potato masher.
  2. Stir the yoghurt in with the blended strawberries.
  3. Switch on ice cream maker and pour in ingredients
  4. Serve garnished with fresh strawberries.
  5. Reflect on how damn clever you’ve been, making such a jolly fabulous investment!
